 Cowboy BBQ Ribs

5 pounds pork spareribs
1 cup water
1/3 cup butter or margarine
2 tablespoons fresh lemon juice
1/4 cup dry mustard
1/4 cup chili powder
1 tablespoon granulated sugar
1 tablespoon paprika
2 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper

For the Meat:
Place spareribs on broiler pan. Cover with foil and roast at 400 degrees F. for 1 1/2 hours.

For the Sauce:
Combine remaining ingredients in medium saucepan and mix well. Bring to a boil then reduce heat; simmer for 30 minutes. Brush sauce onto the ribs. Broil 5 inches from heat for 7-10 minutes on each side. Serve ribs with additional sauce. Equals 6 servings.

Basic Sourdough Biscuit Recipe

2 Cups all-purpose flour
1 Tbsp. sugar
1 Tbsp. baking powder
¾ tsp. salt
2 Cups sourdough starter
Shortening

Combine flour, sugar, baking powder and salt in a large bowl; add the sourdough starter then mix to make a firm dough. Once the sourdough starter and dry ingredients are incorporated quit mixing - do not over knead the dough. Use a biscuit cutter of a desired size or pinch off walnut sized pieces of dough and roll into the shape of a ball. Nest the biscuits close to each other in a greased pan and cook in a 400 degree oven for 30 - 35 minutes.




Cowboy Sausage and Sweet Taters

2 Lbs Sweet Taters
1/2 C. sugar
1/2 C. brown sugar
1/4 C. water
2 tbps. butter
1 tsp. salt
1 Lb. of your favorite sausage

Parboil the sweet potatoes for 15 minutes. Peel and cut into strips. Place in greased oven. Mix sugars, butter, salt, water and boil in a sauce pan. Pour syrup over the potatoes and bake for around 40 minutes. Place sausages on top and bake for and additional 30 minutes.



Lazy B Corn Fritters

1 1/4 cup flour
2 cups corn
1 tsp. baking powder
2 tsp. salt

1/2 cup sugar
1/4 tsp. paprika
2 eggs
1/4 cup milk

Stir dry ingredients together and add corn. Then add the egg yolks beaten thick and fold in egg whites beaten stiff. Fry in hot lard.
Try to use a cold bowl to beat the egg whites if possible.



Buffalo (or beef) Steaks with Chipotle-Coffee Rub

Ingredients

3 teaspoons ground coffee

3 teaspoons ground chipotle pepper (or chipotle chile powder)

1/4 cup paprika

2 teaspoons toasted cumin seeds

3 tablespoons sugar

1 tablespoon salt

4 buffalo or beef steaks (8 ounces each)

Combine coffee, ground chipotle, paprika, cumin seeds, sugar and salt. Rub mixture into steaks. Grill steaks until desired doneness. Makes four servings.

Your Recipe: Crock Pot Baked Navy Beans

2 lb. dry navy beans
1 small onion, chopped
1 cup ketchup
1 cup brown sugar
1 cup water
2 teaspoons mustard
2 tablespoons molasses
1 tablespoon salt or less
8-10 slices bacon, fried crisp

Put beans in three times the volume of unsalted water, & bring to boil. Let simmer for 30 minutes. Let stand in covered hot water for 2 hours. Mix other ingredients in bowl. Drain beans well and mix all ingredients and beans together. Put in crock pot and let cook on low for 12 hours. Stir occasionally. I did add more molasses. Add more water as needed. Sometimes I use the high setting for an hour or two. Each hour on high setting is worth 2 on low.
